Session Summaries

Recipe Retrofit – Using Survivables Research for Brewing – This seminar will take you through an examination into the effect on the aroma profile of beer when swapping hop varieties with low survivable flavour and aroma compounds (those that don’t survive the brewing process) for varieties that have been identified as containing high survivables (those that do). It will also explore the impact of different hop addition timings in achieving your desired aroma flavour profiles.

Crafting Digital Success: A DIY Guide to Digital Marketing for Craft Breweries – Experienced digital marketer Oliver Woods will lead a workshop designed to empower breweries to level up their digital marketing. During this hands-on session, learn winning digital marketing principles, start to craft your brewery’s unique story online, and discover the tips & tricks behind to be effective on social, search and mobile. You will walk away with the tools and confidence to build a successful digital marketing campaign for your brewery.

Off-Flavour Workshop – Industry veteran Michael Jordan leads a sensory workshop designed to help participants identify common off flavours such as oxidation, acetaldehyde, DMS and isoamyl acetate. This session will explore their origins during the brewing process and methods to eradicate them as well as a look into how to set up an in-house sensory programme for your own brewery.

Making Nice Lager Beers, A Practical Guide For Brewers – The session will focus extensively on lager production – how to make a good and clean lager. We will explain how fermentation parameters, i.e. temperatures, gravities, pitching rates, and nutrients content, effect the fermentation performance and flavors. Over these different conditions, it will show how to produce a very robust and stable quality of lager beers. In addition, we will look at the solution to ensure faster fermentation without affecting the flavor so that you can get the best product volume from your equipment specifically in peak season.

Going Commercial? CIP Best Practices – In this session, we will be looking at common oversights on CIP best practices that affect new brewers making their first foray into commercial brewing systems. CIP remains the most important process within the brewing profession regardless of scale, and this session aims to provide practical tips to improve both hygiene and safety when handling CIP.

Strong Communities = Smart Business – Amazon, Facebook, Brewdog – companies built on community. To survive in today’s ultra-competitive world you will need to build strong communities throughout your organization, be they internal (corporate teams), external (consumers) or collaborative (business associations). This hands-on workshop will look at the essential pillars on which to build a successful community and help you develop a pathway to building your own.
