Optimization Of (Dry-) Hopping Regimes
Summary: When setting up the hopping regime in the brewhouse and in the cold section, many factors need to be considered. This presentation will give you an overview on how to improve hop utilization by using various techniques, optimization of technologies as well as specially designed hop products.
The main focus will be on reducing hop derived beer losses while keeping or improving the bitter and aroma yield.

When It All Goes Wrong: How To Create Consistent Beer Quality Outcomes
Summary: Brewing, like all manufacturing, is an at-risk proposition meaning that at any time, things can, and do go wrong – don’t leave it too late to fix it! If you don’t have a clear definition of what a quality batch of beer looks like or a well-defined path on how to get there, then failure becomes inevitable. In this session educator and brewing coach ‘Hendo’ will share how to create a clear definition of quality in your brewery and how you can set your systems up for repeatable, consistent beer quality outcomes so that you’re brewing beer you’re proud of and your consumers buy over and over again.

Brewing fruity & hoppy beers with SafAle S-33
Summary: Brewing fruity & hoppy beers with SafAleTM S-33: Review of our latest studies highlighting the interaction of yeast and hop, especially SafAleTM S-33, including the expression of specific volatile groups such as esters and thiols. Then, we will focus on characterizing how process parameters may affect the fermentation and flavor profile of SafAleTM S-33, and how this yeast can help make nice fruity & hoppy beers.

Summary: In beer production, there are 6 common flavours that can occur in beer that, in some styles, would be considered an off-flavour. In this session, you’ll experience a guided tasting of up to 6 common flavours in beer and learn how to standardise your process of sensory analysis of beer.

Summary: Master Brewer Perry Lam we will explore technical solutions for craft brewers leveraging the unique characteristics of base and specialty malts. Topics include malt selection, recipe development, mashing techniques, and malt handling. He’ll cover how to use malts to enhance flavour, colour, and mouthfeel. Join us to unlock the full potential of base and specialty malts in your brewing journey.

Fruit, huh yeah what is it good for?
Summary: Yardley Brothers Craft Brewery are well known for their fruit and wild fermentation beers. In this session Luke will be sharing his experience in sourcing and selection, seasonality, interacting with your local biome, dosing (when and how much to add) and filtration. He’ll also be looking into the effects of pectin and additives in your fruity brews, balance and recipe development, the “popcorn effect” and pasteurizing vs fermenting.
This session is not to be missed if you currently brew fruit beers or intend to add them to your brewery portfolio.
