Optimization Of (Dry-) Hopping Regimes
Summary: When setting up the hopping regime in the brewhouse and in the cold section, many factors need to be considered. This presentation will give you an overview on how to improve hop utilization by using various techniques, optimization of technologies as well as specially designed hop products.
The main focus will be on reducing hop derived beer losses while keeping or improving the bitter and aroma yield.

Contract Brewing Essentials: Defining Beer Quality For Contract Brewing
Session Summary: When choosing to outsource your beer production to a contract manufacturer, it’s important to ensure that your beer recipe gets made your way. However, a lot of mis-communication can occur between the contract brewer and the host brewery leading to unexpected beer outcomes. As both a Head Brewer of a contract brewery and Gypsy Brewer, Hendo will run through how to write a beer recipe in such a way so that there is a “meeting of the minds” so that a great beer outcome is achieved.

Let’s Talk About Lagers And Options To Make Fruity Lagers
Summary: This session will focus exclusively on lager production – how to make a good and clean lager. We will explain how fermentation parameters such as temperatures, gravities, pitching rates, and nutrients content effect the fermentation performance and flavours. We will show how mastering these different parameters can help produce a very robust and stable quality of lager beers while ensuring faster fermentation so that you can get the best product volume from your equipment, specifically in times of high demand. In addition, we will look at different options to make fruity lagers.

Common Flavours In Beer: A Sensory Experience
Summary: In beer production, there are 6 common flavours that can occur in beer that, in some styles, would be considered an off-flavour. In this session, you’ll experience a guided tasting of up to 6 common flavours in beer and learn how to standardise your process of sensory analysis of beer.

Summary: Master Brewer Perry Lam we will explore technical solutions for craft brewers leveraging the unique characteristics of base and specialty malts. Topics include malt selection, recipe development, mashing techniques, and malt handling. He’ll cover how to use malts to enhance flavour, colour, and mouthfeel. Join us to unlock the full potential of base and specialty malts in your brewing journey.

Fruit, huh yeah what is it good for?
Summary: Yardley Brothers Craft Brewery are well known for their fruit and wild fermentation beers. In this session Luke will be sharing his experience in sourcing and selection, seasonality, interacting with your local biome, dosing (when and how much to add) and filtration. He’ll also be looking into the effects of pectin and additives in your fruity brews, balance and recipe development, the “popcorn effect” and pasteurizing vs fermenting.
This session is not to be missed if you currently brew fruit beers or intend to add them to your brewery portfolio.
